One of the things I love about markets is how specialized some of the vendors are in their wares. This woman, for example, has a nice display of pig snouts, ears, partial heads, tongues, and other various bits. It must be hard work too because you can see a cleaver and a what appears to be a splitting maul sitting beside her chopping block. I can't imagine having my favorite pig snout lady but I am sure that people do and I suspect I am really missing out.
